焼肉 (焼き肉) Yakiniku
焼肉とは、日本語で「焼いた肉」という意味である。Yakiは焼く、Nikuは肉という意味。ステーキとは異なり、肉を一口サイズに薄く切ったもの。Yakiniku is a Japanese term that means grilled meat. Yaki means grilled and niku is meat. Unlike the steak, it is cut into thin slices, bite-sized meat.
火にかけた鉄板や網の上で、牛肉や豚肉などの肉を焼きながら食べる。野菜や魚介類も同時に焼くが、これらの焼き物を総称して "焼肉 "と呼んでいる。日本に焼肉が伝わったのは、1920年代半ばの韓国からの移住民による。韓国発祥の焼肉が日本流にアレンジされた。
We eat meat while grilling them (beef, pork, etc.) on an iron plate or a gridiron placed over a fire. We also grill vegetables and seafood at the same time, but all these grilled things are collectively called “yakiniku.”
Korean immigrants introduced yakiniku in Japan in the mid-1920s. Yakiniku was originated in Korea, but this was revolved into a Japanese way.
タンは舌。カルビは骨なしショートリブで、ジューシーで柔らかい。ロースは肩の部分で、とても濃厚な味わい。ハラミは横隔膜の部分からカットした腹身のこと(スカートステーキ)。
Tan means tongue in Japanese.
Karubi is boneless short ribs. It’s juicy, tender.
Rosu is the shoulder, very rich, slightly leaner cut, but still very tender.
Harami is skirt steak, cut from the diaphragm area.
